Smashed potatoes

This post is dedicated to my dad.




After Gary came home from work Friday night we drove over to my parents to spend the night at their house. They just bought a new double bed to go in my old bedroom so we are comfortable when we want to stay over.

On Saturday my mom made us lunch. As we were sitting down my dad said in an excited voice 'Who wants smashed potatoes?'. Don't you love that? It was hysterical in the moment. English is his third language (after French and Dutch) so mistakes like this one are normal. I will never forget that moment. Smashed potatoes ...

Anyways, more snow came down Friday night so the next day Gary and I put on snow boots (thanks for borrowing me yours, Sofie) and we went for a stroll in my parents' yard. Gary played fetch with the neighbor's dog, threw a ton of snow at me (Why do men always have to do that?) and made a reverse snow angel.

When we came home at night we saw a full bright moon right above our building. Gary took these next two shots.




As you can see the water behind our building was almost frozen solid. Luckily it started raining last night and it's a lot warmer now.

I keep reading on blogs how this January has been so awful for a lot of people. I guess they're experiencing the winter blues right after Christmas. Not here though. Neither of us have been sick, we are healthy and learning more about each other every day. We are happy together (just counting my blessings) and have a lot to look forward to (our monthly wedding anniversaries, Valentine's Day, a family photo shoot in April by this talented lady (besides family pictures at my older sister's and our wedding we've never done this), my older sister having her first baby this spring, Gary's brothers having babies (well you know, their wives are), my younger sister planning her wedding, lots of dates with friends, ...). There are absolutely things in my life I'm unsure of (job situation, ... ) but it seems I have more faith than before that everything will be a-okay. God has our backs and it's more clear to me than ever!

We had a great weekend hanging out with family and friends. How was your weekend?

What a great outlook! And here in the States there actually is a dish that some call smashed potatoes. You take the smaller boiling potatoes (like the little tiny ones) and par-cook them. Then you smash each one and bake them up so they're crispy on the outside and soft on the inside. I've never had them, but I've seen the recipe float around Pinterest. But then, you don't like potatoes so maybe you shouldn't try it :)
